Recipes: Indulgences: Frozen S'Mores

I got this recipe from a kid's show whose name now escapes me because it was last year and I neglected to write the name down. :(

In any event, this is a great alternative to warmed s'mores, particularly with summer coming on when something a little cooler might be more appealing. Another bonus here is that it's very kid friendly so even the littlest ones can help out with making it.


Ingredients:
  • 1 (4 serving) package of instant chocolate pudding and pie filling
  • 1 1/2 cups skim milk
  • 1/2 cup peanut butter
  • 1 pound box graham crackers
  • 1 (8 ounce) container fat-free frozen whipped topping, thawed

Instructions:
  1. In a bowl, whisk together the pudding, milk, and peanut butter.
  2. Divide graham crackers in half - 2 pieces together - and lay on baking sheet.
  3. Spread the pudding mixture on half of the graham crackers, and top with the whipped topping.
  4. With the other half of the graham crackers, press down gently to form a sandwich.
  5. Put the whole baking sheet in the freezer and freeze for about 3 hours.
